Academic Unit: Food and Nutritional Sciences

BSc in Food Science (UCC), PhD and postdoctoral scientist in Nutrition (Cornell).  He has lectured in UCC since 1989 in both food science and nutrition areas.  He has longstanding teaching (including NT4008 Human Nutrition in the Developing World) and research interests in nutrition and health including in developing countries.
