Jacqueline Lyons holds a BSc and PhD in Nutritional Sciences from UCC, as well as an MSc in Human Nutrition from the University of Ulster. Her PhD was fieldwork-based and focused on the relationship between food portion sizes and diet quality in Irish adults and children. From 2012 to 2019 she worked as a Research Scientist at UCC, where she conducted data analysis for publication in nutrition journals, mentored research staff and students and developed research grant proposals. Since 2012, she has taught Nutrition on a number of post-graduate courses at UCC, and in 2018 completed a Post-Graduate Diploma in Teaching and Learning in Higher Education at UCC. As a qualified nutritionist, she continues to engage with the public on a regular basis on various aspects of nutrition and health.
In January 2020, Jacqueline joined Prime UCC as Project Manager on a large, multi-centre EU-funded project led by the School of Food and Nutritional Sciences at UCC.
