Postharvest UV-B treatment of Peach Fruits

The aim of this work was to characterize peach and nectarine cultivars by their different polyphenolic profile and investigate the effects of post-harvest UV-B treatments on the polyphenol content of peach fruit skin.
Several analyses have been carried out on fruits from 3 different cultivars.
Different phenolic profiles were found for the 3 cultivars analysed, in particular Hydroxycinnamates, Flavan 3-ols, Flavonols, Anthocyanins contents were determined. The UV-B post-harvest treatment induced different effects depending on the phenolic substance considered and the length of the irradiation treatment.
