UCC Researcher Wins $10,000 International Meat Science Prize
Eileen Healy, 24, a student at University College Cork, has won the
2006 IMS International Prize for Meat Science and Technology. Eileen,
who is preparing for a Master's Degree in Food Technology has been
awarded the prize for her work on the selection and use of non-meat
ingredients to further enhance the consumer acceptability of meat
products. The alternative ingredients included caseinates, whey
proteins, soya isolates, egg albumens, pea starch and potato starch.
The international competition is designed to give recognition to young
meat scientists from around the world who can demonstrate achievements
in research and development of a high order and who possess outstanding
ability to communicate the results.
Congratulating the prizewinner, the President of the IMS, Patrick Moore
who is Chief Operations Officer of Bord Bia, said that Eileen Healy's
award was a recognition of the importance placed by the IMS on the
choice of meat science as a career for young people. Previous winners
of the prize had come from the United States, Spain, France, Canada,
Australia and Argentina. Eileen is the youngest IMS prize
laureate.
Sixteen leading international figures from industry, university and
governmental research centres judged the communications at the
International Congress of Meat Science and Technology last August. More
than 60 researchers from 40 countries competed for the prize. The Prize
of US$10 000 will be presented to Eileen Healy at the IMS World Meat
Congress which will take place in Brisbane from 26-29 April 2006.
The Congress will focus on global trends, innovations and key issues
affecting the world's meat industries . The strategic significance of
the Asian market will be highlighted at the Congress as well as the
consequences of the WTO Doha Round for the meat sector. The Congress,
which took place in Dublin in 1999, is held in a leading meat producing
nation every two years.
The International Meat Secretariat (IMS), founded in 1974, is an
international non-profit organisation, representing the meat and
livestock sector worldwide and providing a forum for the consideration
of all issues related to it. Its members include the leading meat
and livestock organisations throughout the world.
