Thinking outside the bun wows judges

The winners of the inaugural ‘Think outside of the Bun - UCC Staff Build a Balanced Burger competition’ have been announced.

As part of the plan to promote positive health and staff wellbeing in UCC, the HR Department in conjunction with KSG (Kylemore Services Group) and the Health Promoting University Initiative hosted UCC's first ever burger recipe contest. Staff were invited to submit a recipe for a healthy (balanced) burger which was judged in terms of nutritional balance, taste, creativity and visual appeal by a panel of culinary professionals and discerning burger lovers.

Staff and students were invited to vote for their favourite as the burgers were also available in the Main Restaurant in the run-up to Christmas (this feedback was taken on board by the judging panel at the final stage.)

Angela O’Connell in Law was the overall winner, with staff members Maurice Ryder and Nóirín Deady worthy runners up.

Angela submitted a recipe for a tasty Kofta Burger and following a very close final she was awarded the top prize of a Samsung Galaxy Tab2 8GB Wi-Fi 7”. Maurice created a mouthwatering Turkey Burger with Apple and Onion, with a delicious Falafel Burger with melted cheese and dill yogurt created by Nóirín.

Angela’s burger will be served in the Main Restaurant in UCC in 2014 and it will also form part of the meal plan for Operation Transformation from the UCC Health Matters initiative starting in mid-January 2014.

The healthy eating initiative was led by Catherine Maguire, Department of Human Resources for UCC Staff Wellbeing and supported by KSG, the Office of Media and Public Relations and the School of Food and Nutritional Sciences.
