Mary McCarthy-Buckley has been Manager at the Food Industry Training Unit (FITU), School of Food and Nutritional Sciences, UCC since 1993, managing continuing professional development and training activities in FITU. Mary was also Administrator at the Faculty of Food Science and Technology, UCC, 1993-2000 and has twenty-six years management experience in UCC. She is a Board Member of the Irish Co-operative Organisation Society (ICOS) Plunkett Institute and a Member of the Steering Group of Taste 4 Success Skillnet. Prior to UCC, Mary worked in the National Board for Science and Technology, BioResearch Ireland and FOSS Denmark.

Maura Conway has managed the Diploma in Food Science and Technology in the Food Industry Training Unit since 1993 and has also been involved in the development and management of other Certificate and Diploma Programmes over the years in Meat Technology and Seafood Technology. Prior to joining FITU, Maura held positions in research and development with the Leatherhead Food Research Association and Kerry Group.

Angela joined FITU as Programme Manager in September 2008. She currently manages the Diploma in Speciality Food Production in UCC and a number of other courses & workshops provided by FITU. She has facilitated courses with various key agents in the food and business industry sectors, working with production teams, undergraduate, post-doctoral students and industry management for many years. Her signature focus is team facilitation and communication skills development. Kathy delivers a hands-on approach to learning through the experiential focus of her workshop facilitation. Her previous clients include: Teagasc, EMC, Cork Institute of Technology, ICOS, Sea Fisheries Protection Authority, UCC.

Amy-Jane works on the management of digital technology in FITU, lectures on the Diploma in Speciality Food Production and assists on a variety of short courses. Amy-Jane has a particular interest in food marketing with a focus on digital marketing and communication with the consumer. Amy-Jane also works as a contractor for Brussels based associations responsible for communicating the opinions of health product manufacturers and food producers to the European Parliament, Commission and European Food Safety Authority.

Catherine works in Finance in Irish Steel for ten years. She graduated as an Accounting Technician and has experience in credit management, invoicing, bank reconciliations and ledger maintenance. She has worked privately on annual tax returns for small businesses and has been part of the Food Industry Training Unit team since 2015. She is the financial point of contact for Certificate and Diploma programmes.
