Challenges and opportunities for a sustainable dairy sector: Ideology and nuance

On 15 December 2022 FoodlineUCC, located within the Food Industry Training Unit (FITU), School of Food and Nutritional Sciences, University College Cork in partnership with Taste 4 Success Skillnet were delighted to host Professor Thom Huppertz in this industry focused webinar as part of our Dairy Masterclass Webinar Sessions.

 

Are dairy products sustainable? A simple 4-word question that can yield reactions ranging from ‘yes, absolutely’ and ‘no, absolutely not’ but also the more nuanced ‘it depends how we look at this’ and ‘we can’t consider this in isolation and need to look at a broader picture’. This broader food systems approach necessitates multidimensional consideration of food production and products, going beyond only environmental impact, requiring consideration of also nutrition and health, economics and social aspects. In this webinar, particular emphasis will be on the role of milk and dairy products in healthy and sustainable diets and how technological advances, but also advanced communication strategies, can further strengthen this.

 

Thom HuppertzSpeaker: Professor Thom Huppertz holds an MSc from Wageningen University and a PhD from University College Cork. His research career includes academic and industrial research in the field of dairy science and technology and has spanned many dimensions. From products to processes, and their interactions, from biosynthesis of milk to digestion of milk constituents in the human body, and from product and process optimization to the role of milk and dairy products in sustainable food systems. He currently combines the roles of Professor of Dairy Science and Technology at Wageningen University, Principal Scientist at FrieslandCampina, Distinguished Visiting Professor at Victoria University and Editor-in-Chief of International Dairy Journal.
