Tom O'Callaghan


Dr. Tom O’Callaghan is a lecturer in Food Science and Technology in the School of Food and Nutritional Sciences at UCC. Tom graduated from UCC with a BSc in Food Science in 2014 and PhD in Science in 2018. Tom’s research has focused on chemistry, nutrition, and metabolomics of foods across the supply chain, with particular emphasis on the effects of production practices, cow feeding systems and dairy processing technologies on the quality, nutritional and functional characteristics of milk and dairy products. Tom is a principal investigator with Food For Health Ireland, the Dairy Processing Technology Centre and is an academic collaborator with VistaMilk an SFI Funded Research Centre.
