May Day Milk Magic at UCC with Professor Alan Kelly, School of Food and Nutritional Sciences; food and culinary historian Regina Sexton and Breda McDonald, ICA and RTÉ's ICA Bootcamp series. Mayday or Beltane is one of the four Celtic festivals. In the agricultural year, the day was associated with the start of summertime butter-making. The folklore surrounding the activities of this day is extensive and it deals with the magic of butter-making, the threat of butter stealing and shape shifting butter stealers. This presentation will outline and examine the folklore, ritual and superstitions associated with this day. The presentation will also focus on how dairy products are made and how the art of making butter and cheese, both of which have been made for centuries, is now understood in the scientific world. A demonstration of butter-making is also included in proceedings.
