Sarah K. Walsh, MSc, BSc

Sarah graduated from University College Cork in 2019 with a first-class honour and two Quercus college scholarships in Nutritional Science. During her undergraduate placement she completed a 6-month internship in the Nestlé Development Centre Nutrition where she worked within the R&D department on the development of infant and maternal nutritional products. Sarah then pursued an MSc in Analytical Chemistry and completed her industry funded thesis on “The development, characterization, and immobilisation of selenium nanoparticles” with Glantreo Ltd. based in the Environmental Research Institute, Cork.
Currently, Sarah is working as a PhD student under the supervision of Professor Elke Arendt focusing on the application of fibre-based ingredients in food and beverage products.
