Jonas graduated in Food Chemistry at the Technical University of Dresden in 2018. He wrote his thesis in corporation with the University College Cork at the research group of Professor Elke Arendt. The topic of his thesis was “Bio-degradation of FODMAPs via enzyme technology”. In his PhD he continues the research on the reduction of FODMAPS via various technological and bio-technological approaches.
