Breffney O’Dowling-Keane

Breffney O’Dowling-Keane is a food scientist, chef and blogger. She is the creator of FruitCubed - an innovative product which blends fruit and vegetables into handy ready-to-eat cubes. Breffney talks to us about her time at UCC and how studying Food Science shaped her career path.

Best memory of UCC

Being awarded UCC’s Entrepreneur of the Year with my FYP group- Rooties. Getting recognised for months and months of hard work at a campus wide competition meant the world to us!

How has your time at UCC helped you to get to where you are now?

100%. I am still back in UCC on a regular basis, ye will never get rid of me. Food Science opened so many doors for me. Learning about food from farm to fork, nutrition, packaging, production, and everything in between meant when I first began working in industry I had a huge amount to bring to the table. The Food Science department is relatively small compared to other departments and the lecturers supported us from the moment we walked in the door. If it wasn’t for the eagle eye of Eileen O’ Neill and the encouraging voices of the rest of the team, I would definitely not be where I am today.

• What is your advice to current UCC students?

Enjoy every second. Try every club and sport and make sure to enjoy RAG week- you do not get weeks like those back.

• What person/people at UCC had the most positive influence on you?

The lecturers and my class. We had a small class in Food Science and were extremely close, so we dragged each other through the tough times and were always there cheering on in the good. I met my best friends in Food Science and they are still the ones I call when I can’t remember a test for shelf life, want to think of a flavour combination, just want to natter about the latest food product that has hit the shelves, or just want to talk about anything at all.

Were you involved in any Clubs or Societies?

I was part of the Dance society for a while, but it was against my will, I went as moral support for a friend. The day we had to pirouette across the dance floor and I hit her straight into the teeth, nearly knocking them out was my final curtain call. I never joined the Entrepreneurship society, though have done a couple of events with the guys since leaving and it is my one regret.

Favourite UCC legend or superstition
 
Don’t walk on the grass, or you will fail your exams!! What a smart way to keep your lawn perfect!
