UCC Dairy Science graduate, Ross Lewis, is renowned for championing the best of Irish artisan food produce at his Michelin starred restaurant, Chapter One. He was recently presented with a UCC Alumni Achievement Award at a prestigious ceremony in the university. Mr Jim Corbett, Director, UCC Food Institute, delivered the introductory speech for Ross on the night.

Ross Lewis and Chapter One have placed Ireland firmly on the international food map with culinary gurus such as AA Gill, Colman Andrews and Barbara Fairchild among the esteemed food writers who have visited the restaurant. After university, the Bishopstown native travelled and worked in the restaurant industry in New York, London and Switzerland. His passion and drive to open his own restaurant brought him back to Ireland where he opened Chapter One Dublin in 1992.

The restaurant went on to establish itself as one of the best in Ireland, with numerous awards for both service and food, including a Michelin star awarded since 2007. In 2017, Chapter One was awarded The Restaurant Association of Ireland’s top award, Best Restaurant in Ireland.

Chapter One achieved the ultimate accolade when Ross was asked to cook for Queen Elizabeth II’s banquet in 2011, the recipes from which are included in Ross’ book, ‘Chapter One - An Irish Food Story’. published in 2013.  Ross Lewis recently established a student bursary for UCC's new food course, the Postgraduate Diploma in Irish Food Culture.
