In 2005, Olivia graduated with a BSc degree in Nutritional Sciences from UCC. Two years later she obtained a Masters degree in Nutritional Sciences from UCC. Her postgraduate research involved assessing the bioavailability of vitamins A and E from functional meat products and dairy foods.
On completion of her MSc, Olivia worked as a Food Technologist with Glanbia Nutritionals in Kilkenny. Her job was in the area of new product development and involved applying various potential functional food ingredients into different types of foods. In February 2009, Olivia returned to the team and she is currently assessing the immunomodulatory potential of glycoalkaloids using both in vitro and in vivo models. Olivia is a member of the Nutrition Society.
